Recipe of the Month- June
Roasted Pork Tacos with Pico de Gallo
Makes: 12 Servings
Cook Time: 18 minutes
Preparation Time: 15 minutes
Enjoy the bold flavors of roasted pork steak tacos, perfectly complemented by a fresh and zesty pico de gallo. This vibrant dish brings together tender meat and a medley of vibrant ingredients for a satisfying meal that’s sure to impress.
Ingredients
Tacos:
- 1 pound pork tenderloin
- 2 tablespoons olive oil
- 2 teaspoons paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 12 corn tortilla (4" across)
Pico de Gallo:
- 3 tomatoes, cut into small cubes
- 1/2 cup fresh cilantro, chopped
- 1/2 cup red onion, cut into small cubes
- 2 serrano peppers, chopped
- 2 lemons, juiced
- Salt and pepper to taste
Directions
- Wash hands with soap and water.
- Pico de gallo: In a bowl, mix all the ingredients. Season to taste with salt and pepper.
- Seasoning: In a small bowl, mix the paprika, onion powder, garlic powder, salt and pepper.
- Remove the silver skin from the pork tenderloin, rub it with oil and coat the entire loin with the seasoning.
- Place the pork tenderloin on the grill at medium/high heat (400˚F), over indirect heat, for approximately 6 minutes on each side, 18 minutes total.
- Cook until it reaches internal temperature of 145˚F with a 3-minute rest. Then chop it into small pieces.
- To make the tacos, heat the tortillas and place some pork tenderloin and pico de gallo on top.

Wellness Insurance Incentive
Tooele County School District, in partnership with SelectHealth, provides opportunities for
employees to engage in healthy activities throughout the year. Tooele County School District
supports all employees in reaching their personal health and wellness related goals and
encourages employees to participate in the SelectHealth Share wellness offerings.
By completing the wellness activities listed in the wellness program employee engagement
task list by the given deadlines, all insured employees can avoid paying a premium differential of $100 extra/month for the 2025-2026 plan year.
Employees have a chance to remove the premium differential by completing ALL the wellness activities listed below by December 31, 2024 and letting Kamille Ortiz know by January 5, 2025. Once you have completed the activities and let Kamille know, the differential will be removed the following month.
Wellness Program Employee Engagement Task List:
1. Attend a workplace health education and screening event or complete a preventative exam from a physician by December 31, 2024
2. Complete the online Health Check (Health Assessment) on the Personify Health portal by December 31, 2024
3. Successfully participate and record results in Personify Health for one or more Activity Campaign/Team Challenge by December 31, 2024
4. Complete one or more digital health coaching “Journeys” on the Personify Health portal by April 30, 2025
5. Successfully participate and record results in Personify Health for a second Activity Campaign/Team Challenge by April 30, 2025Complete the Insurance Incentive Form once all steps are completed
*Some SelectHealth Share employees have additional measured engagements to complete
(based on age, gender, medical history, or risk factors). These do not count towards the
Tooele County School District premium differential but are tied to Select Health provided
incentives.
** For a full list of the detailed Share program engagements, please refer to

Please note: Employees who did not complete the 2023/2024 wellness activities by June 30th
2024, will pay $100 extra/month for medical premiums, beginning September 1st, 2024.

How to Use Personify Health
Frequently Asked Questions
If couples work for the district, does only one of them have to do the wellness program? If the second spouse does the program, and insurance isn’t though them, will their numbers count for our district numbers?
Only the subscriber of the policy (whose name it is under) has to complete the Wellness Program. If the second spouse does the program, their numbers won’t count for the district numbers.
Can employees not on the SelectHealth insurance join activity challenges?
Yes. Kamille will need a list of names to add them to the Wellness Only plans so they can have access to Virgin Pulse.
